Spiced Eggnog Spiked with Bourbon

Yields 8-10 servings Prep Time – 15 min Ingredients:
  • 6 eggs whites
  • 6 egg yolks
  • ¾ cup sugar (divided)
  • 2 cups heavy whipping cream
  • ½ gallon whole milk
  • 1 cup bourbon (or more if you would like but not too much)
  • 1 Tbsp. vanilla
  • 1 tsp. cinnamon
  • 1 whole nutmeg (freshly grated/zested)
Instructions:
  1. In a small bowl, beat the egg yolks with ½ cup of the sugar until thick in consistency
  2. In a Kitchen Aid stand mixer, beat the egg whites with ¼ cup of sugar until peaks form (about 4-5 min on high)
  3. Scoop the egg white mix into another bowl and use the stand mixer to whip the cream until peaks form (again about 4-5 min on high)
  4. Using a spatula, fold the yolk mix into the whipped cream until well incorporated
  5. Using the same spatula, fold in the egg white mix until well incorporated
  6. Stir in the milk, bourbon, vanilla, cinnamon, and ¾ of the nutmeg
  7. Make sure the mixture is well chilled then serve
  8. Garnish with the freshly grated nutmeg
